...Limpido e di notevole densità, color verde bottiglia deciso. Al naso offre ampio spettro olfattivo che spazia dal tono fruttato acerbo, banana verde, fino ad un vegetale complesso di erbe officinali e muschio. Ma il vero punto di forza è l'assaggio che si rivela memorabile: l'atteso sapore amaro-piccante si chiude con ricordi variegati di salvia, anice e mentuccia. Quasi eccellente, persistente e in evoluzione.

...Transparent with an impressive body to it and a deep bottle green. A wide, variegated scent with green, fruity tones, green banana and a complex vegetable scents of herbs and moss. But its real strength is in the mouth which is memorable: as one would expect it has the characteristic bitterness and pepperiness which closes with hints of sage, aniseed and penny royal. Nearly excellent, it has a great finish. The olives are pressed using continuous processing. The oil is filtered and kept in stainless steel vats covered in nitrogen to avoid oxidisation. It would not be a gamble to try it on substantial dishes like la pignattaccia viterbese (using lamb or kid) or on a rich plate of pasta alla Norma.
